1.5 each zucchini (slice) 1.5 each squash (slice) 4 plum tomatoes (large dice) 18 each asparagus (cut to bite size) 1 eggplant (large dice) 4 prices of garlic (mince) 1 red onion (sticks) 12 oz tomatoes juices 12 oz water 6 oz tomatoes paste oregano 2 TBS parsley 2 TBS basil 2 TBS salt and pepper to taste
Mix the water,season, tomatoes paste, and tomatoes juices in a mixing bowel. Sweat your garlic then add your tomatoes let the tomatoes break down for 5 minutes. Add the rest of the vegetables in then pour the liquid in and let it simmer for 1.5 hours on low or until your vegetables are soft.
