 Chicken Pepper Soup *

3 pound bell peppers (strips)
1 red onion (strips)
2 shallots (1/4 inch dice)
2 carrots (1/4 inch dice)
Sweat these for 5 minutes.

3 large chicken breasts (strips)
2 pieces of garlic (finely chopped)
1 gallon chicken stock
1 TBS dill
3 TBS parsley
4 TBS salt
1 TBS pepper
Toss in the chicken with the peppers. Let it cook for 10 minutes. Then you add the chicken stock. Then add seasoning in and simmer for one hour and a half.

Are you using an Imperial gallon or an American gallon?
