10 oz Pumpkin (fresh) (dice in 1/2 inch) 2 Squash (dice 1/2 inch) 2 Zucchini (dice 1/2 inch) 3 Carrots (dice 1/2 inch) 2 Onions (dice 1/2 inch) 8 oz Celery (1/2 inch dice) 3 Potatoes (cooked 1/2 way and diced) 1 Tablespoon Thyme (fresh) 1 Tablespoon Dill 1 Tablespoon Parsley (fresh) 1 Gallon Veggies stock 2 Cups Apple wine 1 Cup Apple cider Salt and pepper to taste
Sweat the onion, carrots, and celery. Add the rest of stuff in the pot and simmer for 1 hour.
