1/4 Head of cabbage (1/2 inch dice) 1 Squash (1/2 inch dice) 1 Zucchini (1/2 inch dice) 1/4 bunch Asparagus (1/2 inch long pieces) 1/4 pound Green beans (cut in half) 2 Carrots (1/4 inch dice) 2 stalks Celery (1/4 inch dice) 1/2 bunch Green Onions (1/4 inch dice) 1/2 Red Onion (1/4 inch dice) 2 Plum tomatoes (dice in 1/2 inch) 1/3 Cup Red Wine 2 Gallons of water 3 TBS Parsley (fresh) 1 TBS Thyme 5 Bay Leafs Salt and pepper to taste
Sweat the onions, carrots, asparagus, and celery for 10 minutes on low. Add the tomatoes and sweat for 5 minutes. Add the wine in and the water. Let it simmer for 1/2 an hour. Add the rest of the ingredients in and simmer for 2 more hours.
